When I was growing up, my mother started a catering company. One of the items she made thousands of over the years, was the Puff Pastry Cheese Roll.

I haven’t made these in ages, but while testing another recipe recently, I had half a batch of my Rough Puff Pastry leftover and decided it was time to make it again. Now, making the dough yourself isn’t difficult, but it is time consuming. If you don’t have the time to do it, you can use store-bought puff pastry – something I do often! Using the ready to go dough, makes this a very quick and easy recipe to make that will impress your family or guests.
On its own, this Cheese Roll is delicious. If you want to step it up a notch, serve it alongside sour cream and strawberry compote. Add a green salad and it’s the perfect light summer lunch or dinner.
Puff Pastry Cheese Roll
Cottage cheese filling wrapped in puff pastry. Serve alongside sour cream, strawberry compote and a green salad for a delicious, light lunch or dinner.
Ingredients
• 1 box of puff pastry or half a batch of Rough Puff Pastry
• 2 1/4 lbs. / 1 kg dry curd cottage cheese
• 2 large eggs
• 2 Tbsp. granulated sugar
• 1 1/2 tsp. salt
• 4 Tbsp. all-purpose flour
Directions
• Preheat your oven to 375ºF / 190°C.• Using a stand mixer, combine the cottage cheese, eggs, sugar, salt and flour on medium to medium-high, until the curds have broken down a bit and formed a cohesive filling.
• If you are using the Rough Puff, cut half of the recipe in half again, (so one-quarter of the recipe), and on a lightly floured work-surface, roll the dough into a rectangle, approximately 10″x15″. If you are using store bought dough that comes in sheets that are smaller, roll them out until they are as close to 10″x15″ as possible.
• Brush the edges of the pastry with water. Then place half off the cheese filling along the bottom edge of the dough
• Roll the dough up, forming a roll with the cheese in the center, ending up with the seem on the bottom of the roll. Pinch one end together to seal it, then fold the end under the roll. Repeat with the other end.
• Place the roll on a parchment lined baking sheet. Repeat with the second piece of dough and remaining filling.
• Place the rolls in the oven and bake for 15 minutes, turn the pan and bake another 15-20 minutes or until the rolls are golden brown.
• Remove from the oven and let cool for 5-10 minutes before slicing with a serrated knife.
