There are certain things that I have to eat at least once during Passover or it doesn’t feel like it’s really Passover. Matzo Brei or Fried Matzo is one of them.
There are many different ways to make Matzo Brei, and my preferred method is to break the matzo into pieces, soak in hot water, drain, and then mix with eggs and salt. I then add it to a hot pan coated in butter and spread it out evenly, forming a pancake. Cook on both sides until golden brown and serve with something sweet: syrup, jam, or my favorite, strawberry and blueberries cooked with sugar and lemon juice until syrupy. (If your berries are very sweet, you can reduce the amount of sugar in the recipe.)
I make one batch of Matzo Brei per person, and the Strawberry/Blueberry Conserve recipe below will serve 6-8 people.

Matzo Brei (Fried Matzo)
There are many ways to make and eat matzo brie, but my preferred way is to cook it like a pancake (not scrambled) and eat it with syrup or fruit conserves.
Ingredients
- 1 matzo board
- 1 large egg
- pinch of salt
- 1 Tbsp. butter
Directions
- Break the matzo into large chunks and put them in a bowl.
- Bring some water to a boil in a kettle and pour enough water over the matzo to completely cover it.
- Leave for 2-3 minutes, until the matzo has softened. Drain as much water from the bowl as possible.
- In a small bowl, whisk the egg and salt together. Add to the matzo and mix lightly to coat all of the matzo pieces.
- Place a frying pan over medium-high heat. Add the butter to the pan and melt, swirling the pan so that the bottom is coated with melted butter.
- Pour the matzo/egg mixture into the pan and spread the mixture into a uniform layer.
- Cook for 3-4 minutes, or until golden brown on the bottom.
- Use a large spatula to turn the matzo brei over and cook another 3-4 minutes, until golden brown on the second side.
- Serve with jam, syrup or conserves.
Strawberry/Blueberry Conserves
A great topping for a warm Passover Roll or poured over matzo brei or pancakes. Makes 1 3/4 cups.
Ingredients
- 8 oz. / 225 grams strawberries, hulled and sliced, fresh or frozen
- 8 oz. / 225 grams blueberries, fresh or frozen
- 6 oz. / 170 grams granulated sugar (3/4 cup)
- 2 Tbsp. fresh lemon juice
Directions
- Mix everything together in a pot and place over high heat. Bring to a boil and cook until the blueberries have burst and the liquid released from the berries has thickened to a light syrup, 6-8 minutes.
- Carefully pour into a glass jar or bowl and cool slightly before refrigerating. Cover once chilled and keep for up to a week in the fridge.
