Cucumber Salad

This is a really simple, fresh salad to add to any meal.  During the holidays when my table is full of rich, heavier dishes, I like to include items like this Cucumber Salad to add some relief to the meal.

I use English cucumbers, but use any cucumbers you like — especially delicious with cucumbers fresh from your garden.

This is the type of salad that can keep in the fridge for a few days – if it lasts!

Cucumber Salad

A simple salad of cucumbers, onions and fresh dill. A great addition to any meal.


Ingredients


• 2 English cucumbers, trimmed and thinly sliced
• 1/4 white onion, peeled and thinly sliced
• 3 Tbsp. granulated sugar
• 6 Tbsp. vinegar (use distilled, white wine or red wine vinegar)
• 1 tsp. salt
• 1/8 tsp. black pepper
• 2 Tbsp. chopped, fresh dill
• 1/8 tsp. paprika

Directions


Simply add all of the ingredients to a mixing bowl and mix well.  Let the salad sit for 10 minutes, mix again and taste. Adjust seasoning. Cover and refrigerate until your ready to serve.
